This is one of my favorite meatloaf recipes. I have added to it throughout the years. It is especially good served with a large portion of your favorite home-made mashed potatoes!
Ingredients for Meatloaf:
1 pound lean ground beef
1 pound ground pork
3 slices bread
1 egg
1 medium onion, chopped
1 tablespoon finely chopped parsley
1 teaspoon sea salt
1/4 teaspoon pepper
1/4 teaspoon marjoram
1/2 cup beef stock
1 cup sour cream
Ingredients for Gravy:
1 cup fresh sliced mushrooms
2 tablespoons minced onion
1 tablespoon butter
1 cup beef stock
2 tablespoons water
1 tablespoon cornstarch
Preheat oven to 350 degrees.
Soak the bread in a little water and squeeze dry.
In a large bowl, combine the beef with the pork. Add the soaked bread and the remaining ingredients.
Place in a large meatloaf pan and form into a loaf.
Bake for one hour and 15 minutes or until done. Allow to stand for about five minutes before slicing.
Meanwhile, prepare the gravy. In a medium saucepan, melt the butter over medium heat. Add the mushrooms and onions; cook until tender. Add the beef stock and simmer for about 5 minutes, stirring occasionally. Combine the water and cornstarch in a small cup; stir into the broth. Cook and stir for one minute or until thickened.
Serve hot with the meatloaf.
